These delightful cold dessert cups are filled with fluffy, creamy, tangy cheesecake and juicy, fresh blueberries. At your discretion, you may wish to add some lemon zest or a chocolate element for even more flavor. Yum!

Ingredients

  • 1 cup heavy cream
  • ½ ounce pudding mix, other flavors, instant, sugar and fat free
  • 2 ounce cream cheese
  • 1 tablespoon stevia in the raw, bakers bag
  • 3 ounce blueberries

Instructions

  1. Whisk together the heavy cream and vanilla pudding mix until you have a thick, lump free mixture. Set this aside in your refrigerator until later.
  2. In a stand mixer, mix the cream cheese until it is light and fluffy. Mix in the stevia until you have a creamy, smooth mixture.
  3. Use a spatula to fold the vanilla pudding by hand into the cream cheese. Fold until you have a consistent mixture. Then, gently fold in the blueberries, being careful not to break them too much.
  4. Serve cold in ½-cup portions. You can top with additional fruit or another keto topping.
