Who needs peanut butter cups when you can have Coconut Butter Cups?! These little bites are the perfect peanut and nut-free treat when you need a high-fat snack. The cups are made with 100% unsweetened chocolate, but you can add a few drops of stevia extract to the chocolate if you want a little sweetness. Vanilla extract flavors the chocolate and coconut butter, but you can experiment with other flavors as well, like peppermint, orange or almond extract! Feel free to double or triple the recipe so you always have these tasty little cups on hand!

Ingredients

  • 40 gram 100% unsweerened dark chocolate baking chips by pascha
  • 1 ½ tablespoon all natural coconut butter by maranatha
  • undefinedg vanilla extract
  • 1 teaspoon unsweetened coconut flake by kroger

Instructions

  1. Melt the chocolate in a microwave safe dish until just melted. Mix together and allow the chocolate to finish melting as you mix. Add ⅛ tsp. Vanilla extract to the chocolate as well as any sweetener you’d like (a few drops of stevia extract will work best).
  2. Place mini muffin liners in a muffin pan and carefully add a small amount of chocolate to each liner, as well as spooning the chocolate up the sides slightly. Immediately place the pan in the freezer for 10 minutes.
  3. While the chocolate is chilling, melt the coconut butter. The easiest way to do this is to set up a hot water bath and place the jar of coconut butter in it. Do not place the jar in the microwave or else you will burn the coconut butter. Once melted, measure out the 1.5 Tbsp. coconut butter in a small bowl and mix in ⅛ tsp. vanilla extract.
  4. Remove the pan from the freezer and place a dab of coconut butter in each muffin well. Place the pan back in the freezer for a few minutes.
  5. Take the pan out of the freezer and top the coconut butter layer with the remaining chocolate. Carefully spread the chocolate out so it completely covers the coconut layer. Sprinkle unsweetened coconut flakes on top of the chocolate.
  6. Place back in the freezer for about 20 minutes before enjoying. Remaining cups can be left in the fridge or freezer.
