Sometimes I get a sweet tooth and when I do I reach for chocolate. This chocolate pudding is so rich and decadent without all the carbs. It’s creamy, filling and super satisfying. I hope you enjoy it as much as I do. A hint of coffee is used too to make it extra special, but feel free to leave it out. Use a dark cocoa powder to get a very deep chocolate flavor.

Ingredients

  • ⅓ cup coconut milk by aroy-d
  • 1 tablespoon cocoa dry powder unsweetened
  • ½ avocado, California (black skin) avocado
  • ½ teaspoon instant coffee
  • 5 drop stevia liquid

Instructions

  1. Add coconut milk and cocoa powder to a small saucepan and heat until chocolate melts.
  2. In a blender safe container, add the coconut milk mixture, avocado, Pyure and instant coffee. Blend until smooth. Serve with grated 85% dark chocolate on top!
