If you love cinnamon, you will love this cinnamon roll mug cake topped with a sweet cinnamon glaze! Ready in under 5 minutes.

Ingredients

  • 1 ½ tablespoon butter
  • 3 tablespoon almond flour
  • 4 tablespoon the ultimate icing sugar replacement by swerve
  • ½ teaspoon baking powder
  • 1 large raw egg
  • ½ teaspoon brown sugar replacement by swerve
  • ¼ teaspoon cinnamon
  • 1 teaspoon the ultimate icing sugar replacement by swerve
  • ½ teaspoon water
  • ⅛ teaspoon cinnamon
  • ¼ teaspoon vanilla extract

Instructions

  1. In a tall coffee mug (> 10 oz), melt the butter in the microwave for 20 seconds or until melted.
  2. Add the almond flour, 4 T Swerve icing sugar, vanilla extract, baking powder, and the egg. Mix well to combine.
  3. Remove ¼ of the batter out and add to it ½ t Swerve brown sugar and ¼ t cinnamon. Mix to combine.
  4. Add the cinnamon mixture back into the mug and swirl it into the batter using a skewer to create a swirled effect.
  5. Microwave this on HIGH for 45-50 seconds until cooked through.
  6. In the meantime, combine 1 t Swerve icing sugar, 1/2 t water, and ⅛ t cinnamon. Pour this over the hot cinnamon cake!
