Coffee cake is so delicious and it is made even more delicious by the fact you can whip one up in less than 6 minutes! The trick is to use softened or melted butter to be sure it is all incorporated before cooking in the microwave. Feel free to swap out the almond flour for coconut flour if you have a sensitivity!

Ingredients

  • 3 tablespoon almond flour
  • ¼ teaspoon baking powder
  • 1 tablespoon the ultimate sugar replacement granular by swerve
  • 1 tablespoon water
  • 2 teaspoon butter
  • ¼ teaspoon vanilla extract
  • â…› teaspoon saigon cinnamon
  • 2 teaspoon brown sugar replacement by swerve
  • 1 teaspoon butter
  • 1 teaspoon coconut flour

Instructions

  1. Combine almond flour, baking powder, sweetener, water, vanilla, 2 t softened butter and a pinch of salt together in a ramekin that has been sprayed with coconut oil cooking spray. Stir together until well mixed, then smooth the top.
  2. In another small bowl, combine cinnamon, alternative brown sugar sweetener, 1 t softened butter, a pinch of salt and 1 t coconut flour. Combine until crumbly, then sprinkle on top of cake batter in the ramekin.
  3. Microwave for 45 seconds to 1 minute. Let stand for 1 minute before eating, if you can wait that long!
