These chocolate chip cookies are gigantic! Grain-free and full of healthy fats, this would make for a great breakfast and a killer dessert. Cookie dough batter is creamed together using coconut oil and mixed nut butter and then stuffed full with walnuts and chocolate chips. They are then baked to perfection, crispy on the bottom and soft and gooey in the center. Be sure to let the cookies cool completely before removing them from the cookie sheet after baking.

Ingredients

  • 8 tablespoon coconut oil
  • 6 tablespoon almond butter
  • ¾ cup the ultimate icing sugar replacement by swerve
  • 2 large raw egg
  • 1 teaspoon vanilla extract
  • 2 ½ cup almond flour
  • 2 teaspoon baking powder
  • 1 tablespoon coconut flour
  • 1 ½ cup walnuts
  • 1 cup, whole pieces – regular chocolate chips, sugar free

Instructions

  1. Preheat an oven to 375 F. Cream together the coconut oil, mixed nut butter and sweetener together until creamy about 1-2 minutes. Add in the eggs and vanilla then cream until well combined, scraping down the sides as necessary to incorporate it all.
  2. Add in the almond flour, baking powder, and coconut flour until combined.
  3. Add in the walnuts and chocolate chips. Mix until well disbursed.
  4. Bake for 10-11 minutes. Remove from the oven and allow to cool 5 minutes before removing from the baking sheet.
