Ingredients

  • 1 cup almond butter
  • 1 cup the ultimate icing sugar replacement by swerve
  • 1 large raw egg
  • 2 teaspoon vanilla extract

Instructions

  1. Preheat an oven to 350 F. Line two baking sheets with parchment paper. Combine all the ingredients in a mixing bowl and mix with a stand mixer or hand mixer until combined.
  2. Roll into 15 balls and place on the lined baking sheet. I could fit 12 to a sheet. Press the cookies with the tines of a fork in both directions until flattened.
  3. Bake for 12-14 minutes until cooked through. Allow the cookies to cool completely on the baking sheet before removing.
