This creamy lemon mousse is prepared with soft cream cheese, whipped heavy cream and zesty lemon.

This is a quick to prepare but decadent dessert, perfect for a post dinner treat.

Ingredients

  • 3 ½ ounce cream cheese spread
  • 2 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • ½ cup heavy cream
  • ¼ cup 100% pure erythritol by now

Instructions

  1. Add the erythritol, cream cheese, lemon juice and vanilla to a food processor. Blend until smooth and creamy.
  2. Add the cream to a mixing bowl and whisk vigorously until thick and fluffy. Alternatively you can use a stand mixer with whisk attachment to whip the cream.
  3. Carefully fold the lemon cream cheese mixture into the whipped cream until well combined. Refrigerate until ready to serve.
