If you need to either enjoy the summer weather, or bring a little summer reprieve to some cold weather, this lemon lavender chia pudding is a fabulous recipe to make! This is a fabulous dessert for those who don’t swing towards extra-sweet chocolate or vanilla desserts. A bite of lemon and a hint of subtle lavender are the perfect pair.
Ingredients
- ¾ cup almond milk, vanilla or other flavors, unsweetened
- 1 1 teaspoon lavender dried
- 2 tablespoon, whole pieces chia seeds
- 1 package sweetener herbal extract powder from stevia leaf
- ¼ teaspoon lemon peel
Instructions
- In a small pot, combine the almond milk and dried lavender. With a lid on, bring the milk to a low simmer. Remove the pot from the heat, and allow the lavender to steep for 5 minutes.
- In a bowl, combine the remaining ingredients. Then, strain the lavender milk into the bowl. Whisk together.
- Allow the bowl to cool. Then, cover the bowl in plastic wrap and refrigerate overnight or up to 12 hours.
- Transfer the lemon lavender chia pudding to a serving cup and enjoy!
