This deliciously refreshing ice cream is prepared with cream cheese, heavy cream, fresh mint, avocado and unsweetened chocolate chips.

This simple recipe is made without the need for an ice cream maker and requires no churning whilst setting!

Ingredients

  • 3 ½ ounce cream cheese spread
  • 3 ½ ounce avocado
  • 1 ½ cup heavy cream
  • 1 teaspoon vanilla extract
  • ⅓ cup peppermint, fresh
  • ⅓ cup 100% pure erythritol by now
  • ¼ cup 100% unsweerened dark chocolate baking chips by pascha

Instructions

  1. Add the cream cheese, peppermint, erythritol, avocado and vanilla to a food processor. Blend well to combine until smooth, with little flecks of mint remaining. You can add more or less mint if you prefer a stronger or more subtle flavor.
  2. Add the cream to a bowl and whisk vigorously until thick and fluffy. Alternatively you can whip this in the bowl of a stand mixer until soft peaks form.
  3. Carefully fold the mint cream cheese into the whipped cream.
  4. Carefully stir in the chocolate chips.
  5. Pour the mixture into a freezer proof dish or loaf pan in an even layer and transfer to the freezer for 3 hours or until set. Allow to soften a little before serving.
