Cobber is one of my favorite desserts because it’s warm and pairs well with coffee. This version is very easy to put together, the hardest part is waiting for it to bake! I used a frozen berry blend that included strawberries, blueberries and blackberries.

Ingredients

  • 1 cup blueberries, frozen, unsweetened
  • 1 cup, whole pieces blackberries, frozen, unsweetened
  • 1 cup strawberries, frozen, unsweetened
  • ½ cup the ultimate sugar replacement granular by swerve
  • 2 cup almond flour
  • 6 tablespoon butter
  • ½ cup the ultimate sugar replacement granular by swerve
  • ½ teaspoon cinnamon

Instructions

  1. Preheat an oven to 350 F. Place frozen berries in the bottom of an 8×8 glass dish. Add the granulated sweetener and a pinch of salt. Mix until combined. There will be some sugar at the bottom of the pan and that is fine.
  2. In the meantime, combine the almond flour, melted butter, ½ cup granulated sweetener and cinnamon together until it is well combined and crumbly.
  3. Spread over the top of the fruit evenly and bake for 40-45 minutes until the crumb topping is nicely browned and the fruit is bubbling.
  4. Serve hot!
