This mocha inspired chia pudding is rich with coffee, chocolate and whipped cream – perfect for a decadent breakfast or post dinner treat!
Ideal for making in bulk to provide multiple desserts throughout the week!
Ingredients
- 3 tablespoon, whole pieces chia seeds
- 1 tablespoon maple flavored syrup by lakanto
- ½ cup almond milk, vanilla or other flavors, unsweetened
- ½ cup black coffee
- ½ tablespoon cocoa powder, unsweetened
- ½ cup whipped cream, unsweetened
Instructions
- Add the coffee to a mixing bowl along with the cocoa powder. Mix together to dissolve the cocoa.
- Add the milk and syrup and stir well to combine.
- Add the chia seeds and mix well. Leave to stand for twenty minutes then stir well again.
- Transfer the chia pudding to individual serving glasses or jars, cover and refrigerate for a minimum of two hours, ideally overnight.
- Top each pudding with half of the whipped cream to serve.
