This mocha inspired chia pudding is rich with coffee, chocolate and whipped cream – perfect for a decadent breakfast or post dinner treat!

Ideal for making in bulk to provide multiple desserts throughout the week!

Ingredients

  • 3 tablespoon, whole pieces chia seeds
  • 1 tablespoon maple flavored syrup by lakanto
  • ½ cup almond milk, vanilla or other flavors, unsweetened
  • ½ cup black coffee
  • ½ tablespoon cocoa powder, unsweetened
  • ½ cup whipped cream, unsweetened

Instructions

  1. Add the coffee to a mixing bowl along with the cocoa powder. Mix together to dissolve the cocoa.
  2. Add the milk and syrup and stir well to combine.
  3. Add the chia seeds and mix well. Leave to stand for twenty minutes then stir well again.
  4. Transfer the chia pudding to individual serving glasses or jars, cover and refrigerate for a minimum of two hours, ideally overnight.
  5. Top each pudding with half of the whipped cream to serve.
