Ingredients

  • 1 ¼ cup unblanched almond flour by hodgson mill
  • 5 tablespoon psyllium husk powder soluble fiber by now
  • 1 teaspoon coarse kosher salt by morton
  • 1 teaspoon baking powder
  • 2 tablespoon the ultimate icing sugar replacement by swerve
  • 2 teaspoon apple cider vinegar
  • 1 cup boiling water
  • 3 large raw egg, white
  • 1 teaspoon vanilla extract
  • ½ cup the ultimate icing sugar replacement by swerve
  • ¼ cup brown sugar replacement by swerve
  • ¼ teaspoon coarse kosher salt by morton
  • 1 teaspoon saigon cinnamon

Instructions

  1. Preheat an oven to 350 F. Prepare a bundt pan with nonstick cooking spray. Combine the almond flour, psyllium husk powder, 1 teaspoon kosher salt, baking powder and 2 tablespoons of Swerve (icing sugar) together in a medium mixing bowl.
  2. Add 1 cup of boiling water and begin to stir to incorporate the water halfway.
  3. Then add the apple cider vinegar, vanilla extract and raw egg whites. Mix very well to combine. You may need to use your hands to combine or a stand mixer with a paddle attachment.
  4. Then in a small bowl, combine the rest of the Swerve (both the icing sugar and brown sugar), the rest of the kosher salt and cinnamon. Mix well.
  5. Roll the dough into 1 ½” balls and coat completely in the cinnamon sugar mixture.
  6. Begin to line the bottom of the bundt pan with the balls. You should be able to make 20-22 balls at this size. Fill the bottom of the bundt pan with one layer and then add one more layer of balls on top.
  7. Sprinkle the remaining cinnamon and sugar mixture on top and bake for 40-45 minutes until the bread is completely cooked through.
  8. The bread will collapse if it is not cooked long enough. Remove from the oven and allow to cool slightly before unmolding.
