These simple low carb popsicles are sweet with fresh strawberries and mint and a hint a of lemon.
These are a great cooling treat to have on hand for long summer days!
Ingredients
- 1 cup strawberries, fresh
- 1 tablespoon maple flavored syrup by lakanto
- ½ cup water
- ¼ cup peppermint, fresh
- ½ each – juice from one lemon lemon juice, fresh
Instructions
- Add the strawberries, mint leaves, lemon juice and syrup to a food processor. Pulse to combine and break down the fruit.
- Add the water and blend well until combined, and only small flecks of fruit and mint remain.
- Divide the mixture between 4 popsicle molds and insert the sticks.
- Transfer to the freezer for 2-3 hours until frozen.
