Can I Use a Different Fruit?

We have chosen to use strawberries to sweeten our whipped Keto mousse. Strawberries are a great low carb choice that can be enjoyed in moderation as part of a balanced Keto diet. If you preferred to use an alternative fruit, blueberries or raspberries would make a good substitution.

Can I Use a Different Sweetener?

We have added powdered erythritol to our Keto dessert recipe to add sweetness to the creamy mousse base. You may swap this for your preference in powdered or granulated low carb sweetener, adjusting the quantities to taste. You may also omit sweetener entirely if preferred and add a few extra strawberries to naturally sweeten the mousse. Please be sure to adjust your macros to account for any changes made to the recipe.

Ingredients

  • 2 tablespoon 100% pure erythritol by now
  • 1 cup cream cheese spread
  • ¾ cup strawberries
  • ¾ cup heavy cream
  • ½ teaspoon vanilla extract

Instructions

  1. Add the powdered erythritol to a food processor along with the strawberries. Blend together to combine. You may use an alternative low carb powdered or granulated sweetener, adjusting quantities to taste.
  2. Add the cream cheese to the food processor with the strawberry mixture. Blend until smooth and well combined. The mixture should be similar to a milkshake consistency.
  3. Add the heavy cream and vanilla extract to a large mixing bowl. Whisk the cream vigorously for 3-4 minutes until thick and fluffy. The cream should be whipped well so that it is light and airy. Alternatively, you may whip the cream in a stand mixer with a whisk attachment.
  4. Carefully add the strawberry mixture to the bowl with the whipped cream. Gently fold the whipped cream and strawberry mixture together until completely blended together. The mixture should be light and airy.
  5. Divide the mixture evenly between four serving bowls or large ramekins. Transfer the bowls to the fridge to chill until ready to serve. Serve cold and optionally top with low carb berries.
