This light and fluffy vegan mousse is rich with creamy coconut milk yogurt with a hint of butterscotch from the Lakanto syrup.

Quick and easy to prepare this dairy free dessert comes together in no time at all.

Ingredients

  • 2 tablespoon cocoa powder, unsweetened
  • 6 ounce coconut milk yogurt alternative by coyo
  • 1 tablespoon maple flavored syrup by lakanto
  • ⅛ teaspoon salt, sea salt
  • ⅓ cup coconut milk, vanilla or other flavors, unsweetened

Instructions

  1. Add the coconut yogurt and coconut milk to the bowl of a stand mixer with a whisk attachment.
  2. Whisk the mixture together until light and fluffy.
  3. Add the syrup, salt and cocoa powder to the bowl.
  4. Whisk again until soft peaks form and the mixture is completely smooth.
  5. Divide between two ramekins and refrigerate for 30 minutes to firm a little before serving.
