About

You can enjoy this vegan Keto recipe as a sweet treat or as a mini fat bomb. Pull a vegan edible cookie dough ball from your fridge when you want something cool and a little chocolatey to bite into. It takes less than 30 minutes to make and chill the cookie dough balls, so they’re perfect for anyone new to the Keto diet or for those without much time to spare. As mentioned in the recipe directions, you can store your completed cookie dough balls in your refrigerator for up to 5 days. You may also freeze the cookie dough balls and thaw them in your refrigerator when you are planning to eat some. If you’re having trouble finding specialty baking ingredients for vegan and Keto diets, check stores that have an aisle or area dedicated specifically for these diets. Many ingredients can also be purchased online.

Is 100% Dark Chocolate Vegan?

The short answer is yes, 100% dark chocolate is technically vegan. However, not all brands selling chocolate chips honor this. When you’re shopping for 100% dark chocolate chips, check the ingredient list. Many name brands still include dairy or milk products in their dark chocolate. If you can’t find truly vegan chocolate chips in the baking aisle at your grocery store, check for an area that is specifically dedicated to vegan or sensitive diet ingredient substitutes.

Vegan Sources Of Keto Fat

In many cases, many natural fats are both vegan and Keto! If you’re using oils, use olive oil or coconut oil for most cooking or baking. Use avocado oil for cooking or frying ingredients at high temperatures. Most nut butters can be used on the Keto diet, but check the nutrition labels to note the carbs per serving. Some of the healthiest Keto nuts are cashews, almonds, and peanuts.

Ingredients

  • ½ cup almond flour
  • 2 tablespoon coconut flour
  • 1 teaspoon brown sugar replacement
  • 2 tablespoon coconut oil
  • 5 drops liquid stevia
  • 1 teaspoon almond milk
  • 1 tablespoon vegan dark chocolate morsels

Instructions

  1. Combine the almond flour, coconut flour, and Keto brown sugar substitute in a mixing bowl with a wooden spoon. Next, melt the coconut oil in your microwave in a heat-safe dish, and stir the liquid stevia into the melted coconut oil. Pour the sweetened coconut oil into the dry ingredients, and stir to combine. Add almond milk to the dough ¼-teaspoon at a time as you stir until your cookie dough comes together. Finally, fold the vegan dark chocolate chips into the dough.
  2. Select a clean plate or line a plate or small tray with parchment paper. Scoop the dough into 1 tablespoon portions, and roll each portion into a ball. Make sure each scoop of dough includes an equal amount of chocolate chips. If the dough starts to fall apart as your rolling, you may need to just wash and dry your hands before continues. Arrange the rolled cookie dough on your prepared dish.
  3. Place the cookie dough balls in your refrigerator for at least 15 minutes. They shouldn’t harden but will become more firm so they’re easier to pick up. Enjoy after chilling. To save leftover pieces, wrap your dish with plastic wrap and store it in your refrigerator for up to 5 days. Take a cookie dough ball from your refrigerator whenever you want a sweet treat!
