These vegan ice lollies are rich with creamy coconut milk yogurt and a twist of zesty lime for a tropical flavor combination.

These are a quick and easy dessert option, perfect for summer days!

Ingredients

  • 4 teaspoon, shredded coconut, dried, shredded or flaked, unsweetened
  • 1 ½ tablespoon maple flavored syrup by lakanto
  • 1 teaspoon vanilla extract
  • 1 teaspoon lime zest
  • 9 ounce coconut milk yogurt alternative by coyo
  • ½ tablespoon lime juice, fresh

Instructions

  1. Sprinkle a teaspoon of the shredded coconut into each of your four lolly molds. Add the yogurt, syrup, lime juice, lime zest, and vanilla to a mixing bowl. Beat together until smooth.
  2. Divide the yogurt mixture evenly between the 4 moulds.
  3. Insert the lolly sticks and transfer to a freezer for 3-4 hours to set or until frozen.
