These vegan ice lollies are rich with creamy coconut milk yogurt and a twist of zesty lime for a tropical flavor combination.

Ingredients
- 4 teaspoon, shredded coconut, dried, shredded or flaked, unsweetened
- 1 ½ tablespoon maple flavored syrup by lakanto
- 1 teaspoon vanilla extract
- 1 teaspoon lime zest
- 9 ounce coconut milk yogurt alternative by coyo
- ½ tablespoon lime juice, fresh
Instructions
- Sprinkle a teaspoon of the shredded coconut into each of your four lolly molds. Add the yogurt, syrup, lime juice, lime zest, and vanilla to a mixing bowl. Beat together until smooth.
- Divide the yogurt mixture evenly between the 4 moulds.
- Insert the lolly sticks and transfer to a freezer for 3-4 hours to set or until frozen.
