This vegan Keto custard is simple to prepare and deliciously thick and creamy. Our simple low carb custard is prepared with coconut cream, almond milk, vanilla extract, and low carb maple-flavored syrup. Once heated through, the liquids are cooked with a little xanthan gum until thickened to a custard consistency. This is a great vegan/egg-free custard option, perfect for serving over your low carb crumbles and sponge puddings!

Can I Use a Different Sweetener?

We have used a low carb maple-flavored syrup to sweeten our vegan Keto custard. You can use any low carb sweetener you prefer, adjusting the quantities as needed to reach your desired sweetness. Please be sure to adjust your macros accordingly for any changes made to the original recipe.

Do I Have to Use Xanthan Gum?

We have added xanthan gum to our custard base to thicken the liquids, creating a creamy egg-free custard consistency. Xanthan gum is a great gluten-free and Keto-friendly thickening agent that works in place of traditional carb-heavy thickeners such as flour and cornstarch. Adding the xanthan gum is crucial as this is what is needed to thicken the liquids and achieve the desired texture. We have used 1 and a half teaspoons of xanthan gum to the recipe, creating a thick yet pourable custard. You may add more or less as desired to reach your preferred consistency.

Ingredients

  • 2 tablespoon maple flavored syrup by lakanto
  • 1 ½ teaspoon xantham gum gluten free by hodgson mill
  • 1 teaspoon vanilla extract
  • ¾ cup almond milk, vanilla or other flavors, unsweetened
  • ½ Cup coconut cream, canned

Instructions

  1. Add the coconut cream and almond milk to a small saucepan. Set over a low/ medium heat. Stir together, melting the coconut cream into the almond milk as it heats through.
  2. Add the Lakanto maple-flavored syrup and vanilla extract. Stir well to combine. Simmer the mixture until it is hot through. You may add more vanilla and syrup/ sweetener as desired to suit your personal tastes.
  3. Sprinkle 1 teaspoon of the xanthan gum over the surface of the hot milk mixture. Whisk immediately into the liquid until smooth and well combined. Continue adding the remaining gum a little at a time, whisking until thickened to your preferred consistency. Please note this will thicken further on standing, so add more or less gum to your preference. Serve hot over low carb sponge puddings or fruit cobblers.
