Air Fryer Paleo Sausage Brussels and Sweet Potatoes

We love a delicious Low Carb Air Fryer recipe made with plenty of vegetables! Low Carb Paleo dish is made with olive oil-coated Brussels sprouts that also have been tossed with sweet onions. The sweet potatoes are finely diced and tossed with olive oil, sweet paprika, garlic powder, and sea salt. Both sets of vegetables are cooked to perfection in the air fryer. This meal can easily be made in the oven if you do not have an air fryer too.

What kind of sausage should I use?

Please feel free to use any sausage you would like, but be sure to pick one that is high in protein as well as saturated and monounsaturated fats. You can copy this recipe and substitute the sausage with the brand of your choice in the Carb Manager app to adjust the macros.

Can I omit the sweet potatoes?

If you are wanting to make this a Keto recipe, feel free to take out the sweet potatoes completely. Continue to use the method listed below for the Brussels sprouts and sausages.

Are sweet potatoes Low Carb?

Ingredients

  • ⅓ lb sweet potato, baked
  • 1 tablespoon extra virgin olive oil
  • ¼ teaspoon paprika
  • ¼ teaspoon garlic powder
  • ⅛ teaspoon sea salt
  • ½ tablespoon extra virgin olive oil
  • ¼ teaspoon salt, sea salt
  • 10 oz brussels sprouts, raw
  • ½ medium – 2 1/2" diameter white onion
  • 5 link cajun style andouille smoked pork sausage

Instructions

  1. Begin by peeling and then finely dicing the sweet potatoes. Place them into a mixing bowl and toss with the 1 tbsp olive oil, paprika, garlic powder, and sea salt.
  2. Place the sweet potatoes into the air fryer with the rack and cook at 400 F for 15 minutes.
  3. While the sweet potatoes are cooking prepare the Brussels sprouts. Wash and cut the Brussels sprouts in half. Then toss them in a bowl with ½ tbsp olive oil, ¼ tsp sea salt, and sliced white onion.
  4. Cook the Brussels sprouts at 400 F for 5 minutes.
  5. Once both the sweet potatoes and the Brussels sprouts are cooked, combine them at the bottom of the air fryer basket but remove the rack this time. Add halved sausages (cut lengthwise) on top of the vegetables.
  6. Cook at 400 F for 10 minutes or until browned. Serve immediately!
