  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon white pepper, ground
  • 1 large – 7 1/4" to 8 1/2" long carrots, raw
  • 6 oz broccoli florets raw
  • ½ medium – 2 1/2" diameter onion
  • 1 tablespoon avocado oil
  • 1 tablespoon tamari sauce
  • 1 tablespoon tamari sauce
  • ½ tablespoon shaoxing rice wine
  • 1 teaspoon sesame oil
  • 16 oz cauliflower rice

Instructions

  1. Season the shrimp with oyster sauce, ¼ tsp sea salt, and ⅛ tsp white pepper. Toss together to combine.
  2. Then cook the shrimp at 375 F for 5 minutes with the rack at the bottom of the air fryer.
  3. Drain any water after cooking and set the shrimp aside.
  4. Peel and slice the carrots on a bias into thin pieces, about ⅛” thick. Slice the onions into thin strips. Then place the veggies in the air fryer with no rack. Add in 1 tbsp avocado oil and soy sauce cook at 375 F for 2 minutes. The vegetables should still be crunchy.
  5. Add the cooked shrimp back and the remaining soy sauce, Shaoxing wine, and sesame seed oil.
  6. Cook at 400 F for two more minutes. Serve immediately on top of cauliflower rice.
