This flavorsome zucchini is seasoned with fresh garlic and tangy parmesan cheese, then wrapped in bacon before being baked until golden.

This makes a great lunch served with salad or starter to a main meal.

Ingredients

  • 4 slice – 6" long bacon
  • 1 clove garlic
  • 1 tablespoon, grated parmesan cheese
  • 1 small zucchini
  • ½ tablespoon olive oil
  • ⅛ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Slice the zucchini in half lengthwise and carefully score a criss-cross pattern into the flesh of each zucchini half.
  3. Crush the garlic and sprinkle over the zucchini halves along with the parmesan, salt and pepper. Use your hands to rub the garlic and seasonings into the scored zucchini flesh.
  4. Wrap two strips of bacon tightly around each zucchini half.
  5. Arrange the zucchini on a shallow oven tray and drizzle with the oil. Transfer to the oven for 20-25 minutes to bake or until the zucchini is tender and the bacon is golden and cooked through.
