A fresh pork shoulder is seasoned well outside with a mixture of cayenne pepper, smoked paprika, minced dried onion, garlic powder, and plenty of sea salt. The shoulder is roasted for 8 hours or more until tender and falling off the bone. The tender meat is served with a lemon-chipotle mayo which is tangy and spicy at the same time.

What can I serve with the pork shoulder?

You can serve the shoulder on top of a bowl of cauliflower rice with a spicy slaw or Low Carb tortillas with onion, lime, and chopped cilantro salsa. To make the cilantro lime salsa, combine diced white onion and chopped cilantro in a 1:1 ratio. Then squeeze on lime juice and salt to taste.

You can eat leftover pork shoulder, in the same manner, the following day. After that, the shoulder can be shredded thinly and sauteed into a hash with other Low Carb vegetables and topped with cheese. You can also use the meat in wraps along with shredded lettuce, sliced tomatoes, and cucumbers with a ranch dressing.

How long does the shoulder take to cook?

Depending on your oven, the shoulder should take at least 8 hours to cook on low heat. Choose a day to cook the shoulder when you are home most of the day. Other than that, pork shoulders are easy to cook in this manner. Simply place it in the oven and forget about it until dinnertime, when it will be tender and juicy!

  • 4 teaspoon cayenne
  • 4 tablespoon paprika
  • 4 teaspoon dried minced onion
  • 4 teaspoon garlic powder
  • 8 teaspoon coarse kosher salt
  • 8 lb pork fresh shoulder blade boston roasts separable lean only cooked roasted
  • 4 tablespoon mayo
  • 1 ½ tablespoon lemon juice
  • 1 teaspoon chipotle chili powder
  • 1 teaspoon cumin, ground
  • ⅛ teaspoon coarse kosher salt

Instructions

  1. Preheat the oven to 400 F. Combine the seasoning for the outside of the pork shoulder. The seasonings include cayenne pepper, smoked paprika, minced dried onion, garlic powder, and kosher salt.
  2. Sprinkle the paprika mixture over the pork on all sides and press in to stick. Be sure to place the shoulder on a parchment or foil-lined baking sheet.
  3. Roast for 45 minutes to one hour until the shoulder has achieved a nice color on the outside.
  4. Then turn the heat down to 300 F and allow the shoulder to roast for at least 8 hours. The meat should pull off very easily with a pair of tongs or fork. While the pork is out of the oven and cooling, make the chipotle-lemon mayo by combining the remaining ingredients.
  5. Remove the pork from the oven and shred the meat, removing any bones in the center. Serve immediately.
