A bed of seasoned cauliflower rice is the basis of this lunch-time bowl. It’s coated in lemon juice and butter. Laid on top is a thin-sliced steak covered in seasonings and a layer of gooey, melted swiss cheese. This hot lunch is a satisfying recipe for anyone with that little extra time at home to cook in the afternoon, but it makes a great meal prep recipe too!

Ingredients

  • ¾ cup cauliflower rice
  • ⅛ teaspoon salt
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon onion powder
  • ⅛ teaspoon paprika
  • ½ teaspoon oregano, dried
  • ½ teaspoon lemon juice
  • ½ tablespoon unsalted butter
  • 3 ounce sirloin tip steak thin sliced by wal-mart
  • ⅛ teaspoon seasoned salt
  • ⅛ teaspoon black pepper, ground
  • ⅛ teaspoon garlic powder
  • ⅛ teaspoon crushed red pepper flakes by 365
  • ⅛ teaspoon paprika
  • 1 teaspoon olive oil
  • 1 slice (from pre-sliced package) – each 3/4 ounce swiss cheese

Instructions

  1. Make the rice first by tossing the cauliflower rice with the salt, pepper, onion powder, paprika, and oregano in a pan over high heat. Cook until excess moisture from the rice evaporates and the rice starts to turn golden brown. Squeeze the lemon juice into the rice. Then, reduce the heat to low and melt the butter in the rice. Cook until golden brown.
  2. Transfer the cooked rice to a serving dish. Return the pan to the stove. Season a whole piece of steak with seasoned salt, pepper, garlic powder, red pepper, and paprika. Heat the olive oil in your pan over medium-high heat, cooking on both sides to a golden brown with grill marks. This is a thinner piece of steak so it will be cooked closer to done at about 5 minutes per side.
  3. Let the steak rest. Then, slice the steak into thin strips. The thinner, the better for this recipe. Return the steak strips to your pan and lay the swiss cheese over the steak. Cook over low heat with a lid on the pan to melt the cheese.
  4. Transfer your cheesy steak to your rice bowl. This recipe was garnished with fresh chopped green onion.
