Cooked chicken slices are loaded with guacamole and shredded lettuce to create these simple yet tasty lunchbox treats.

These are a great lunch option or an easy to prepare snack between meals.

Ingredients

  • 4 slice chicken slices
  • 1 each avocado
  • 2 cherry cherry tomato
  • 1 teaspoon lime juice, fresh
  • 1 teaspoon, chopped red onion
  • ½ tablespoon, chopped cilantro
  • ½ cup, shredded shredded lettuce
  • ¼ teaspoon red chili flakes by sweet tomatoes
  • ⅛ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Roughly chop the avocado and finely dice the tomato. Add to a mixing bowl along with the red onion, lime juice, chili flakes, salt and pepper. Mash together to form a chunky paste.
  2. Divide the guacamole evenly between the four slices of chicken, creating a strip close to the edge.
  3. Add the lettuce and divide between the four chicken pieces.
  4. Scatter each with fresh cilantro.
  5. Carefully roll the chicken around the filling, overlapping the edges to form a tight tube. Serve immediately or refrigerate until ready to serve.
