These simple omelette rolls ups are seasoned with dried oregano and filled with oozy mozzarella cheese and tender deli chicken slices.

These make a great snack or lunch option served with salad.

Ingredients

  • 4 slice chicken breast deli rotisserie seasoned sliced prepackaged
  • 3 medium raw egg
  • 1 teaspoon oregano, dried
  • 1 tablespoon butter, unsalted
  • ½ cup, grated mozzarella cheese
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Crack the eggs into a mixing bowl and add the oregano, salt and pepper, beat together well to combine.
  2. Heat the butter in the skillet over a medium heat and add the beaten egg. Leave to settle and cook through.
  3. Scatter the grated cheese over the cooked omelette and allow to melt.
  4. Carefully remove the omelette from the skillet, place on a clean worktop and leave to cool. Arrange the chicken slices over the cooled omelette.
  5. Carefully roll the omelette up into a log shape.
  6. Using a sharp knife, carefully slice the omelette into 8 even segments.
