This take on a BLT utilises the lettuce to create a wrap around this classic filling.
Cooked chicken is combined with bacon, tomato and mayonnaise to create these filling lunchtime wraps!
Ingredients
- 4 outer (large) leaf romaine lettuce
- 4 slice – 6" long bacon
- 3 cherry cherry tomato
- 1 cup rotisserie chicken
- 1 tablespoon mayonnaise
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Heat a non stick frying pan over a medium heat. Roughly dice the bacon and add to the pan, frying until crisp and cooked through. Set aside to cool.
- Whilst the bacon cools, tear the chicken into small bite sized chunks and add to a mixing bowl along with the mayo. Roughly dice the tomatoes and add to the bowl along with the bacon. Season with salt and pepper.
- Add the mayonnaise and stir well to combine.
- Arrange the lettuce leaves in pairs so that they are overlapping each other. Divide the BLT filling evenly between the two lettuce wraps.
- Fold the lettuce around the filling, securing with a toothpick if required. Serve immediately.
