These keto inspired chilli dogs are loaded into lettuce cups and topped with mustard and tangy grated cheese. If you would prefer your chilli milder/spicier you can adjust the seasonings accordingly.

2 chilli dogs serve as a filling lunch or you can enjoy one per person as a snack.

Ingredients

  • 7 ounce ground beef
  • 4 medium link – breakfast size sausage, pork, fresh
  • 1 tablespoon olive oil
  • 1 tablespoon, chopped red onion
  • ¼ cup, grated cheddar cheese
  • 4 outer (large) leaf romaine lettuce
  • ¼ medium – 2 1/2" diameter x 2 3/4" green bell pepper
  • ½ cup beef broth, bouillon or consomme, homemade
  • 2 teaspoon mustard
  • 2 teaspoon tomato puree
  • 1 teaspoon chili powder
  • ½ teaspoon gourmet collection smoked paprika by mccormick
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin, ground
  • 1 teaspoon oregano, dried
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat the broiler to medium and line a grill tray with foil. Arrange the sausages across the tray and broil for 12 minutes or until completely cooked through.
  2. Whilst the sausages are cooking, heat the olive oil in a large pan over a medium/high heat. Add the beef and onion and cook until brown all over.
  3. Finely dice the pepper and add to the pan along with the tomato puree and all the spices and seasonings. Stir well to combine.
  4. Add the stock to the pan and stir. Simmer for 15 minutes until all the liquid has been absorbed.
  5. Arrange each sausage in a lettuce leaf and top with the beef chili.
  6. To serve, spoon over the mustard and scatter over the grated cheese.
