These simple kebabs are loaded with flavor from spicy aromatic chorizo and a zesty marinade.

Perfect for lunch or a light dinner with a simple salad, these kebabs are also a great addition to the BBQ!

Ingredients

  • 4 ½ ounce cod
  • 3 ½ ounce dry cured chorizo
  • 1 small zucchini
  • 1 clove garlic
  • 1 tablespoon olive oil
  • 1 teaspoon lemon peel or zest raw
  • 2 teaspoon, chopped thyme, fresh
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Cover 4 wooden skewers in water and allow them to soak for 20 minutes. Preheat the oven to 400 degrees Fahrenheit and line a shallow oven tray with baking paper.
  2. Dice the chorizo, cod and zucchini into even sized chunks. You want to end up with 12 chunks of each. Add to a large mixing bowl.
  3. Mince the garlic and add to the mixing bowl along with the thyme, lemon juice, zest, oil, salt and pepper. Toss everything together well to combine, coating the fish, chorizo and zucchini in the seasonings.
  4. Dividing the ingredients evenly, thread onto the four kebab skewers. You should have three pieces of chorizo, fish and zucchini per kebab.
  5. Arrange the skewers across the lined oven tray and transfer to the oven to bake for 10-12 minutes, turning halfway through, or until the fish and meat are cooked through.
