This keto salad is loaded with fats and flavor from tender spinach, creamy avocado, aromatic basil, mozzarella and crisp prosciutto.

This makes for a great lunch or light dinner option.

Ingredients

  • 3 slice prosciutto
  • 2 cup baby spinach
  • 1 ¾ ounce mozzarella cheese
  • 1 ½ tablespoon olive oil
  • 1 tablespoon basil, fresh
  • 1 tablespoon red onion
  • ½ each avocado
  • ½ tablespoon lemon juice
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon salt, sea salt

Instructions

  1. Heat the olive oil in a skillet over a medium heat and add the prosciutto. Cook through until crisp and golden.
  2. Add the spinach to a large salad/serving bowl. Roughly tear the mozzarella, thinly slice the avocado and finely dice the onion. Add to the bowl along with the basil. Season with salt and pepper and drizzle over the remaining oil and lemon juice. Toss to combine.
  3. Tear over the crispy prosciutto to serve.
