If you’re using this Keto recipe for meal prepping, the easiest side dish to include is cauliflower rice. You can prepare a ½-cup of riced cauliflower in your preferred style or try one of Carb Manager’s many cooking styles. Despite sharing categories with high-carb fruits and vegetables, tomatoes are pretty Keto-friendly! Most tomatoes only have 2-3g carbs for every 100 grams. What tomatoes you eat on the Keto diet are interchangeable too! So it doesn’t matter what tomatoes you use in your recipes because the macros won’t change.

Ingredients

  • 1 pound chicken breast boneless skinless raw
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ⅛ teaspoon onion powder
  • ½ teaspoon italian seasoning
  • ½ teaspoon olive oil
  • 7 ½ ounce grape tomato
  • 10 leaf basil

Instructions

  1. Prepare the chicken by patting whole chicken breasts dry with a paper towel. Cut the chicken breast into 1-2-bite pieces and add to a mixing bowl. Mix the chicken with the salt, pepper, onion powder, italian seasoning, and olive oil. If there are any additional seasonings you want to add to taste, do so now.
  2. Pour the seasoned chicken pieces in the base of a Crock Pot. Cut your tomatoes into halves or quarters, and place the tomatoes over the chicken. Add whole basil leaves to the top of the ingredients. If you don’t have grape tomatoes, you can substitute with any type of tomato. Cherry tomatoes, Roma, Plum, or Heirloom are all acceptable substitutions.
  3. Cook the tomato basil chicken on high heat for 4 hours. You can also cook on low heat for 8 hours. After cooking, stir all the ingredients together with a large spoon. The tomatoes will naturally fall apart as you stir the chicken together. Serve hot with a Keto side dish or distribute into meal prep containers.
