These simple skewers are rich with aromatic curry spiced marinade and creamy paneer cheese.
Perfect for broiling or adding to the BBQ! These would work well with a simple side salad.
Ingredients
- 9 ounce paneer cheese (indian cheese)
- 2 teaspoon tomato puree
- 1 teaspoon curry powder
- 1 tablespoon dannon all natural yogurt, plain
- 1 tablespoon olive oil
- 1 large red onion
- 1 clove garlic
- ½ teaspoon cumin, ground
- ½ teaspoon spices coriander seed or ground
- ½ teaspoon paprika
- ½ teaspoon ginger, ground
- ¼ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Cover 4 wooden skewers with water and soak for 20 minutes.
- Dice the paneer into 12 even sized cubes. Peel the onion and slice into 8 even wedges. Add to a mixing bowl.
- Add the olive oil, yogurt, tomato purée, dried herbs, spices and salt and pepper to a mixing bowl. Stir well to combine.
- Spoon the marinade over the cheese and onion. Use your hands to mix together, coating everything in the dressing. Set aside until the skewers are ready.
- Divide the marinated mixture between the four skewers so that each kebab has 3 pieces of paneer and two onion wedges.
- Heat a broiler to medium and arrange the skewers across a grill tray. Cook for 4 minutes each side or until cooked through and starting to caramelise around the edges.
