These simple skewers are rich with aromatic curry spiced marinade and creamy paneer cheese.

Perfect for broiling or adding to the BBQ! These would work well with a simple side salad.

Ingredients

  • 9 ounce paneer cheese (indian cheese)
  • 2 teaspoon tomato puree
  • 1 teaspoon curry powder
  • 1 tablespoon dannon all natural yogurt, plain
  • 1 tablespoon olive oil
  • 1 large red onion
  • 1 clove garlic
  • ½ teaspoon cumin, ground
  • ½ teaspoon spices coriander seed or ground
  • ½ teaspoon paprika
  • ½ teaspoon ginger, ground
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Cover 4 wooden skewers with water and soak for 20 minutes.
  2. Dice the paneer into 12 even sized cubes. Peel the onion and slice into 8 even wedges. Add to a mixing bowl.
  3. Add the olive oil, yogurt, tomato purée, dried herbs, spices and salt and pepper to a mixing bowl. Stir well to combine.
  4. Spoon the marinade over the cheese and onion. Use your hands to mix together, coating everything in the dressing. Set aside until the skewers are ready.
  5. Divide the marinated mixture between the four skewers so that each kebab has 3 pieces of paneer and two onion wedges.
  6. Heat a broiler to medium and arrange the skewers across a grill tray. Cook for 4 minutes each side or until cooked through and starting to caramelise around the edges.
