This delicious keto salad is packed with flavor and texture from hard boiled eggs, crisp salad vegetables and tangy blue cheese.
This makes a great light lunch option or side salad.
Ingredients
- 2 large – 1" to 1 1/4" diameter radish, raw
- 2 medium hard boiled egg
- 2 cup baby spinach
- 1 large – stalk – 11" to 12" long celery
- 1 tablespoon red onion
- 1 tablespoon blue cheese
- 1 tablespoon olive oil
- ⅛ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Roughly dice the celery and thinly slice the radishes. Add to a large serving bowl along with the spinach and red onion. Toss to combine.
- Quarter the eggs and add to the bowl. Season the salad with salt and pepper and drizzle over the olive oil, toss gently to combine.
- Crumble the cheese into the salad to serve.
