This sweet and savory salad is packed with rich flavors and textures from salty Serrano ham, tangy goats cheese, tender asparagus and juicy strawberries.

This makes a great lunch option for 2, perfect for lunch on the go.

Ingredients

  • 8 small – spear – 5" long or less asparagus
  • 2 medium – 1 1/4" diameter strawberries
  • 2 slice serrano ham slices by sainsbury's
  • 2 cup watercress
  • 1 ¾ ounce goat cheese, soft
  • 1 ½ tablespoon olive oil
  • ½ tablespoon lemon juice
  • ⅛ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Heat half a tablespoon of olive oil in a skillet over a medium heat. Add the ham and cook for 2-3 minutes, turning halfway through until crisp on both sides. Set aside to cool and crisp.
  2. Whilst the ham is cooking, slice the tough ends from the asparagus and discard. Add the asparagus to a pan of boiling water. Simmer for 2-3 minutes until fork tender, drain and rinse under cold water.
  3. Add the watercress and asparagus to a large serving dish. Slice the strawberries and roughly tear the goats cheese into bite sized chunks. Add to the bowl and season everything with salt and pepper.
  4. Drizzle over the lemon juice and remaining olive oil and toss to combine.
  5. Roughly break the crispy ham and scatter over the salad to serve.
