This keto take on poutine uses green beans as the base loaded with cheese curds and a rich and creamy gravy.

Perfect served as a side or even a lunch on its own.

Ingredients

  • 7 ounce green beans
  • 2 ½ ounce cheese curds
  • 1 ½ tablespoon cream cheese spread
  • 1 clove garlic
  • 1 teaspoon thyme, dried
  • 1 tablespoon unsalted butter
  • ½ cup beef broth, bouillon or consomme, ready-to-serve can, low sodium

Instructions

  1. To prepare the gravy, melt the butter in a small pan over a low/medium heat. Mince the garlic and add to the pan along with the thyme sweating until tender and fragrant.
  2. Add the cream cheese and stir until melted.
  3. Add the stock and stir well. Bring to a gentle boil, then simmer until you have a thick gravy.
  4. Whilst the gravy is cooking, add the green beans to a pan and cover with boiling water. Bring to a boil and then simmer for 5-6 minutes until tender.
  5. Drain the beans and add to a large serving bowl. Roughly dice or crumble the cheese curd over the hot beans.
  6. Drizzle the gravy over the top of the beans and cheese to serve.
