This grilled cheese sandwich makes for the perfect indulgent weekend lunch served with a simple green salad.

This recipe includes the making of a fathead dough for the bread. If you have a preferred dough recipe, that would work just as well.

Ingredients

  • 1 ½ tablespoon unsalted butter
  • 4 ounce food cupboard home baking almonds ground by sainsbury's
  • 1 small raw egg whole
  • ⅔ cup, grated mozzarella cheese
  • ⅔ cup, grated cheddar cheese
  • ½ tablespoon cream cheese spread
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Add the mozzarella to a heat proof bowl along with 1/2 tablespoon of butter. Create a double boiler, melting the cheese and butter until well combined. Allow to cool a little.
  2. Add the ground almonds to a food processor along with the cream cheese, cooled melted cheese mixture and the salt and pepper. Blend well to combine.
  3. Add the egg and blend again to form a sticky dough.
  4. Cover the dough in plastic wrap and transfer to the fridge for 30 minutes.
  5. Preheat the oven to 350 degrees Fahrenheit and line a shallow oven tray with baking paper.
  6. Open the dough out on the plastic wrap and lay another sheet of the plastic wrap on top. Roll into a rough square shape about 1/3 inch thick.
  7. Turn the dough out onto the baking paper, discarding the plastic wrap.
  8. Transfer to the oven to bake for 8 minutes then turn and bake for a further 8 minutes until lightly golden all over.
  9. Slice the bread in half and liberally butter each side.
  10. Cover one of the buttered sides with the grated cheddar.
  11. Preheat a broiler to high and broil the cheese covered slice until the cheese begins to melt.
  12. Top the sandwich with the remaining slice and broil for a further minute, or optionally finish off in a hot buttered griddle pan for a char griddled look. Slice in half to serve.
