This quick and easy lunch can be made in under 15 minutes! Giant leafy greens are filled with hot turkey and provolone cheese as well as crisp cucumber and creamy avocado. A smear of mayo across your lettuce wraps adds a healthy dose of fat to your meal.

Ingredients

  • 2 slice – each 1 ounce turkey
  • 4 slice (from pre-sliced package) – each 3/4 ounce provolone cheese
  • 2 outer (large) leaf lettuce, green leaf
  • 1 tablespoon mayo
  • 1 ounce cucumber
  • 1 ounce avocado, black skin, california type

Instructions

  1. Preheat an oven to 350 degrees and line a small sheet tray with parchment paper. Lay 2 slices of turkey down on the tray, and lay 2 slices of provolone cheese on each slice of turkey. Bake the tray in the oven for about 5 minutes – just long enough to melt the cheese.
  2. While the cheese is melting and cooling, arrange the base of the lettuce wraps. Lay down 2 large green leaves and spread ½ TB of mayo across each leaf. Arrange 6 slices of cucumber and 5 thin slices of avocado across the leaves.
  3. Once your turkey and cheese has cooled enough to handle, transfer a slice of turkey with cheese onto each green leaf. Roll each leaf up to complete your lettuce wraps. Enjoy!
