Cuban sandwiches traditionally are made with a sweet ham, slow-roasted pork, pickle, swiss cheese, and sometimes an assortment of other veggies all layered within a loaf of cuban bread. This keto adaption is all those favorite ingredients wrapped inside a lettuce wrap! Even better, this lunch can be made in under 20 minutes!

Ingredients

  • 2 medium slice – 4 1/4" x 4 1/4" x 1/16" – each 0.75 ounce ham
  • 2 teaspoon dijon mustard
  • 2 slices president's jamon serrano dry-cured ham by daniele
  • 1 ounce kosher baby dills by great gherkins
  • 3 slice (from pre-sliced package) – each 3/4 ounce swiss cheese
  • 2 outer (large) leaf lettuce, green leaf

Instructions

  1. Preheat an oven to 350 degrees and line a sheet tray with parchment paper. On the parchment paper, lay down 2 slices of ham and spread a teaspoon of dijon mustard across each.
  2. Next, lay a slice of cured pork over each mustard layer. Slice and arrange your pickle on top of the pork.
  3. Lay 1 ½ slices of swiss cheese on top of each cuban stack. Place the tray in the oven and cook for 6-7 minutes or until the cheese is melted and just slightly golden on the edges.
  4. Lay 2 large green leaves on a flat surface, removing the hard core if necessary. You can tear and rearrange the leaves so they lay completely flat. Use a spatula to transfer each cuban stack from your sheet tray to lay horizontally at one end of each green leaf.
  5. Roll up your cuban lettuce wraps, folding the edges of the green leaf in like a burrito as you go. Enjoy right away or slice each wrap in half before eating.
