For a super easy lunch or satiating snack, these cucumber subs can really hit the spot! Cool, crisp cucumbers encase an assortment of deli meats sandwiched by a creamy, seasoned spread. Of course, no Italian sub is complete without a few spicy banana peppers!

Ingredients

  • 2 ounce cream cheese
  • ½ teaspoon olive oil
  • ¼ teaspoon italian seasoning
  • 8 ounce cucumber
  • 6 rings mild banana pepper rings by mt olive
  • ¼ ounce salami
  • ¼ ounce capicola
  • ¼ ounce pepperoni

Instructions

  1. Soften the cream cheese in the microwave for about 15 seconds. Then, mix it together with the olive oil and italian seasoning. It should have a consistency similar to mayonnaise. Set this aside.
  2. Prepare a large (approximately 12 oz) cucumber by removing the ends. Slice the cucumber through the middle both ways, leaving you with 4 pieces. Use a spoon to remove the wet seeds and core. Pat the cucumbers dry with a paper towel as well.
  3. Spread your cream cheese spread into the centers of 2 pieces of cucumber. Top the cream cheese off with about 3 banana pepper rings each.
  4. For each cucumber sub, lay 3 slices of deli meat on top of each other (1 salami, 1 capicola, 1 pepperoni), roll them up, and place them in the center of the empty cucumber halves.
  5. Sandwich your cucumbers together so you have 2 long subs. At this point, you may bite into them and enjoy. You may also slice each sub in half again, leaving you with 4 smaller portions for snacking. Enjoy!
