This Keto lamb and lettuce recipe makes for a great comfort food lunch. These easy Keto lettuce cups are loaded with deliciously tender lamb to create a hot lunch or dinner option. Quick and easy to prepare, this Keto lunch is loaded with fats and flavor.

What are Keto lettuce Cups?

Lettuce cups are the perfect easy Keto option for your favorite low carb fillings. Firm lettuce leaves are simply used as a base to hold or wrap around your preferred fillings. Perfect for holding low carb veggies, protein and healthy fats. For this recipe, we have pan fried tender ground lamb with sweet red onion to fill our lettuce cups. This is then drizzled with a tangy lime, garlic and tahini dressing and topped with fresh cilantro.

Serving Suggestions

These comforting Keto lettuce cups make for a great lunch option served with sliced avocado or juicy olives. They would also be an excellent appetizer before a main course. Alternatively serve for dinner accompanied by Keto cous cous or cauliflower rice.

Ingredients

  • 9 ounce lamb, ground
  • 4 inner (small) leaf romaine lettuce
  • 2 ½ tablespoon olive oil
  • 1 teaspoon lime juice, fresh
  • 1 tablespoon cilantro
  • 1 teaspoon tahini
  • ½ small red onion
  • ½ clove garlic
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Thinly slice the red onion. Heat a tablespoon of olive oil in a skillet over a medium/high heat. Add the ground lamb. Add the sliced onion to the skillet along with a generous pinch of salt and pepper. Stir well to combine. Pan fry the lamb and onion, breaking the lamb into small pieces as you cook. Pan fry until the lamb is browned all over, completely cooked through and the onion is soft. About 8-9 minutes.
  2. Whilst the lamb is cooking you can prepare the dressing. Very finely crush the garlic and add to a small mixing bowl. Add a generous teaspoon of tahini. Add the lime juice, remaining olive oil and a pinch of salt. Whisk together until smooth and well combined.
  3. Clean the lettuce leaves and trim any tough stalks. Arrange the leaves on a large serving platter or individual plates. Divide the cooked lamb and onion evenly between the four prepared lettuce cups, filling the center of each.
  4. Drizzle the tahini dressing evenly over each lamb filled lettuce cup. Finely chop the cilantro. Scatter the cilantro over the lettuce cups. Serve the lamb hot with your preferred Keto sides.
