These griddled zucchini boats are topped with aromatic ground beef, sweet tomatoes, grated mozzarella and fragrant basil.

These make a great lunch option served with an Italian inspired salad or a snack on their own.

Ingredients

  • 4 ½ ounce hamburger or ground beef, 90% lean
  • 1 ½ tablespoon, grated mozzarella cheese, whole milk
  • 1 tablespoon olive oil
  • 1 clove garlic, fresh
  • 1 teaspoon oregano, dried
  • 1 medium zucchini, cooked from fresh
  • 1 tablespoon basil, fresh
  • ½ small – 2 2/5" diameter tomato raw (includes cherry, grape, roma)
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper, ground

Instructions

  1. Slice the zucchini in half lengthwise and scoop out some of the center to provide extra room for the filling. Heat a griddle pan over a high heat and add the zucchini slices cut side down. Cook for 3-4 minutes each side until tender and char lines appear.
  2. Heat the olive oil in a skillet over a medium heat. Add the beef, cooking until just browned then crush the garlic and add to the pan. Stir well and cook for a minute to soften.
  3. Roughly dice the tomato and add to the pan with the oregano, salt and pepper. Stir well and cook for a few minutes until the beef is well browned and the tomatoes have softened.
  4. Divide the cooked beef between the two zucchini boats.
  5. Scatter over the grated mozzarella and fresh basil to serve.
