This popular twist on sushi combines Asian cuisine with a Mexican flair, and you can make it at home! Marinated tuna is accompanied by fresh jalapeno and cilantro. The spicy flavor is balanced out with a cucumber wrapping. No worries, this sushi roll still tastes terrific dipped in soy sauce!

Ingredients

  • 2 ounce tuna, raw
  • ½ teaspoon lime juice, fresh
  • ¼ teaspoon soy sauce
  • â…› teaspoon salt
  • 4 ounce cucumber, raw, with peel
  • 1 sheet laver (nori), dried
  • ¼ ounce cilantro
  • ½ regular – approx 2" long jalapeno peppers

Instructions

  1. Ahead of time (the morning before or night before you want to make your sushi), combine finely diced tuna with the lime juice, soy sauce, and salt in a small ziploc bag. The finer you dice your tuna the better it will be for the sushi roll! Tightly roll your sealed ziploc bag and store it in your refrigerator for at least 2 hours (overnight is okay as well).
  2. When your tuna has finished marinating, start assembling your sushi! Create the base layer by peeling off 4 oz wide strips from a whole cucumber. Lay the cucumber strips down, heavily overlapping each other, until you have a layer slightly wider than your sheet of nori roasted seaweed. Use a paper towel to remove excess moisture from the cucumber layer.
  3. Lay the sheet of nori on top of your cucumber layer. Spread the marinated tuna along one side of the nori sheet, as pictured.
  4. Lay full stems of cilantro alongside your tuna. Finely slice julienne strips of jalapeno and lay them on top of the cilantro, as pictured.
  5. Tightly roll your sushi by beginning at the end with all the filling. Tuck the loose cucumber strips under the roll to seal it shut. Work inch by inch, continually tucking the cucumber to create your tight roll. Then, slice 6 pieces from the sushi roll.
  6. Enjoy your sushi with your favorite toppings, such as soy sauce, spicy mayo, sriracha, fresh ginger, or lime wedges. This sushi was served with sesame seeds and wasabi paste!
