This “no lettuce” salad is all your favorite keto toppings in a taco salad! Snack on this recipe for a light lunch or a hearty snack. This recipe also leaves room for you to add on lettuce, turning this meal prep into a full meal.

Ingredients

  • 2 teaspoon olive oil
  • 4 ounce ground beef
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper, ground
  • ⅛ teaspoon onion powder
  • ¼ teaspoon cumin, ground
  • ¼ teaspoon paprika
  • ⅛ teaspoon garlic powder
  • 5 grape grape tomato
  • 2 ¼ ounce avocado
  • 1 ¾ ounce cheddar cheese, natural

Instructions

  1. In a small pan, heat the olive oil over medium-high heat. Combine the ground beef with all seasonings in the hot oil. Cook until the beef is cooked through and golden brown. You can break the beef up until it’s crumbly or leave it in chunkier pieces for eating.
  2. While the cooked beef is cooling slightly, cut the tomatoes in half, chop the avocado, and cube the cheese.
  3. Arrange all ingredients in a meal prep container. You can leave each ingredient separate to enjoy in bites as a snack. You can also add lettuce and your favorite keto dressing at your discretion. Have warm or cold!
