If you’re a lover of seafood, then you’ll be a lover of this catfish nugget recipe! The catfish is flaky, tender, and it has the perfect crunch from a well-seasoned parmesan “breading.” Pair the nuggets with the included recipe for a cool, refreshing avocado dipping sauce. There’s no added carbohydrates from mayo or greek yogurt! A fresh squeeze of lemon will bring your meal together!

Ingredients

  • 8 oz, boneless, raw (yield after cooking) catfish
  • ¾ cup grated parmesan cheese
  • ¼ teaspoon salt
  • 1 teaspoon black pepper
  • ½ teaspoon spices garlic powder
  • ½ teaspoon spices paprika
  • 1 large egg
  • 1 tablespoon vegetable oil
  • 2 ½ oz yields avocado
  • 1 tablespoon tabasco sauce
  • ¼ teaspoon salt
  • 1 tablespoon lemon juice raw
  • ¼ cup parsley raw
  • ¼ cup sprigs dill weed fresh
  • ½ teaspoon lemon peel raw

Instructions

  1. Prepare the catfish nuggets by slicing the catfish into 1 or 2-bite sized pieces. You should get approx. 16 pieces total.
  2. In a bowl, combine the grated parmesan, salt, pepper, garlic powder, and paprika. In another bowl, crack and whisk a single egg. Set these two bowls aside with the catfish.
  3. *Please use 1 cup of vegetable oil for this step. In a large, shallow pan, heat the vegetable oil on high heat. When the oil is heated, dip each catfish nugget, one by one, into the egg, then the parmesan mixture, and then into the hot oil. Cook the catfish nuggets for around 3 minutes per piece, flipping them halfway through, until the outside is golden brown and crunchy.
  4. Set the cooked catfish nuggets on a plate lined with a paper towel to absorb excess oil. Meanwhile, make the avocado dip by combining all remaining ingredients in a food processor. Mix these ingredients until you get a smooth, creamy, and slightly loose dipping sauce. Enjoy!
