This simple slaw is loaded with raw and crunchy low carb veggies, crispy bacon and coated in a tangy lemon oil.

This is a great option as a mayonnaise free slaw or a simple side salad.

Ingredients

  • 4 sprout brussels sprouts, raw
  • 2 slice – 6" long bacon
  • 1 ½ tablespoon olive oil
  • 1 tablespoon lemon juice
  • ½ cup red cabbage
  • ½ cup green cabbage
  • ¼ small red onion
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Heat half a tablespoon of olive oil in a skillet over a medium heat and cook the bacon through until crisp and golden. Set aside to cool.
  2. Slice the base from the sprouts and discard. Thinly slice the sprouts, onion and cabbage and add to a mixing bowl. Toss to combine.
  3. Crumble the bacon over the vegetables and season the slaw with salt and pepper. Mix to combine.
  4. Whisk together the olive oil and lemon juice and drizzle it over the slaw, stirring well to coat.
