This simple keto salad is loaded with low carb veggies, aromatic herbs, protein rich eggs and a creamy lemon mayo dressing.

This is a great lunch or light dinner option.

Ingredients

  • 2 cup arugula
  • 2 medium hard boiled egg
  • 1 ½ tablespoon mayonnaise, store bought
  • 1 cup cauliflower rice
  • ½ cup cucumber, raw, without peel
  • ½ small yellow bell peppers, raw
  • ½ small red bell peppers, raw
  • ½ tablespoon lemon juice
  • ¼ teaspoon salt, sea salt
  • ⅛ teaspoon black pepper

Instructions

  1. Add the cauliflower rice to a small pan over a low/medium heat. Add two tablespoons of water and bring to a simmer, cooking gently for 3-4 minutes until the cauliflower is tender and the water has been absorbed.
  2. Finely dice the bell peppers and cucumber and add to a large serving bowl along with the cauliflower rice and arugula. Season to taste and toss to combine.
  3. Slice the hard boiled eggs and arrange in amongst the salad.
  4. Mix together the lemon juice and mayonnaise until smooth.
  5. Drizzle the lemon mayo over the salad to serve.
