These meals work great to meal prep as they can be eaten cold from the fridge. They also work great as a savory breakfast, a quick lunch or an easy dinner. There are so many tasty parts to this plate, I think you will be quite satisfied and pleased! It’s definitely a meal to look forward to. I like to use pastrami seasoned smoked salmon because it’s a little different and adds some spiciness. I dip the cucumbers into the cream cheese (I used a chive and onion kind) and top it with the onions, capers and smoked salmon. It is so delicious you won’t even miss the bagel.

Ingredients

  • 1 cups spinach & arugula by fresh express
  • 1 teaspoon extra virgin olive oil
  • 2 ounce pastrami wild alaskan sockeye salmon applewood smoked by private selection
  • ½ tablespoon, sliced red onion
  • 1 teaspoon, whole pieces capers
  • ¼ cup cottage cheese
  • 2 ounce cucumber, raw, with peel
  • 1 tablespoon cream cheese

Instructions

  1. Add arugula to a plate and top with olive oil and sprinkle with a little salt for flavor.
  2. Add the cottage cheese.
  3. Shingle the smoked salmon to the side of the arugula.
  4. Then add slices of red onion and the capers to the side, along with the cucumbers cut into matchsticks and herbed cream cheese.
