These meals work great to meal prep as they can be eaten cold from the fridge. They also work great as a savory breakfast, a quick lunch or an easy dinner. There are so many tasty parts to this plate, I think you will be quite satisfied and pleased! It’s definitely a meal to look forward to. I like to use pastrami seasoned smoked salmon because it’s a little different and adds some spiciness. I dip the cucumbers into the cream cheese (I used a chive and onion kind) and top it with the onions, capers and smoked salmon. It is so delicious you won’t even miss the bagel.
Ingredients
- 1 cups spinach & arugula by fresh express
- 1 teaspoon extra virgin olive oil
- 2 ounce pastrami wild alaskan sockeye salmon applewood smoked by private selection
- ½ tablespoon, sliced red onion
- 1 teaspoon, whole pieces capers
- ¼ cup cottage cheese
- 2 ounce cucumber, raw, with peel
- 1 tablespoon cream cheese
Instructions
- Add arugula to a plate and top with olive oil and sprinkle with a little salt for flavor.
- Add the cottage cheese.
- Shingle the smoked salmon to the side of the arugula.
- Then add slices of red onion and the capers to the side, along with the cucumbers cut into matchsticks and herbed cream cheese.
