This keto recipe for pan fried sardines is accompanied by a light and refreshing salsa of tomato, onion and avocado.
Perfect as a light lunch on its own or served alongside a green salad, this is a great option when you are short of time.
Ingredients
- 4 medium – approx 3" long sardines, cooked from fresh or frozen
- 2 tablespoon parsley, fresh
- 2 teaspoon lemon juice
- 2 tablespoon olive oil
- 1 medium – 2 3/5" diameter tomato
- 1 each avocado
- ½ small red onion
- ⅛ teaspoon salt, sea salt
- ⅛ teaspoon black pepper
Instructions
- Heat one tablespoon of olive oil in a frying pan over a high heat. Season the sardines with a little salt and pepper and place in the hot pan skin side down. Cook for 3-4 minutes until the skin is golden brown. Flip the fillets and cook for a further 1-2 minutes until cooked through.
- Whilst the sardines are cooking you can prepare the salsa. Finely slice the onion and dice the avocado and tomato. Add to a mixing bowl with the lemon juice, remaining olive oil and a pinch of salt and pepper. Finely chop the parsley and add to the bowl, mixing everything together well to combine.
- Serve the fried sardines fillets topped with salsa.
