This crisp keto salad is packed with crunchy red cabbage, sweet red onion, peppery arugula and creamy avocado. Topped with a tahini dressing and a scattering of sesame seeds.

This is a great light lunch option, or a side salad served with fish, pork or chicken.

Ingredients

  • 2 teaspoon lime juice, fresh
  • 1 cup red cabbage
  • 1 cup arugula
  • 1 teaspoon, whole pieces sesame seeds
  • 1 each avocado
  • 1 tablespoon olive oil
  • 1 teaspoon sesame oil
  • 1 teaspoon tahini
  • ¼ teaspoon salt, sea salt
  • ¼ small red onion
  • ⅛ teaspoon black pepper

Instructions

  1. Thinly slice the cabbage and red onion. Add to a large serving bowl with the arugula and toss to combine. Slice the avocado and add to the salad.
  2. In a small bowl, whisk together the olive oil, sesame oil, lime juice, tahini, salt and pepper.
  3. Drizzle the salad with the dressing and scatter over the sesame seeds to serve.
