This crisp keto salad is packed with crunchy red cabbage, sweet red onion, peppery arugula and creamy avocado. Topped with a tahini dressing and a scattering of sesame seeds.
This is a great light lunch option, or a side salad served with fish, pork or chicken.
Ingredients
- 2 teaspoon lime juice, fresh
- 1 cup red cabbage
- 1 cup arugula
- 1 teaspoon, whole pieces sesame seeds
- 1 each avocado
- 1 tablespoon olive oil
- 1 teaspoon sesame oil
- 1 teaspoon tahini
- ¼ teaspoon salt, sea salt
- ¼ small red onion
- ⅛ teaspoon black pepper
Instructions
- Thinly slice the cabbage and red onion. Add to a large serving bowl with the arugula and toss to combine. Slice the avocado and add to the salad.
- In a small bowl, whisk together the olive oil, sesame oil, lime juice, tahini, salt and pepper.
- Drizzle the salad with the dressing and scatter over the sesame seeds to serve.
