These lettuce cups are packed with an Asian inspired slaw and sesame coated shrimp.

This is a great option for a quick and easy lunch, ideal for meal prepping!

Ingredients

  • 2 inner (small) leaf romaine lettuce
  • 1 cup shrimp, cooked from fresh
  • 1 tablespoon mayonnaise
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon lime juice, fresh
  • 1 teaspoon lime zest
  • 1 teaspoon, chopped red onion
  • 1 tablespoon, chopped coriander leaf, fresh
  • ½ tablespoon, whole pieces sesame seeds
  • ¼ cup, chopped red cabbage
  • ¼ cup, shredded green cabbage

Instructions

  1. Finely slice the cabbage and add to a mixing bowl along with the red onion.
  2. Add the mayonnaise, sesame oil, soy sauce and lime zest. Mix everything together well to combine.
  3. Add the shrimp to a mixing bowl along with the lime juice and sesame seeds. Stir well to combine.
  4. Divide the slaw mixture evenly between the two lettuce leaves.
  5. Top with the sesame shrimp.
  6. Scatter with fresh cilantro to serve.
